Use both the roots and leaves of beets for the full experience. Both are characteristically earthy, with the roots providing a rich and complex flavor that is balanced out by the Chard-like leaves. Beets contain a unique variety of antioxidants.
Remove the tops and store separately. Tops and roots should both go in sealed containers in the coldest part of the fridge. Tops will keep up to 10 days and roots up to 6 months.
